Mathieu's career

Having obtained an HND which included the Art of Table option and achieving a distinction in wine waiting, Mathieu Vial joined first the Château of Bagnols in the Beaujolais region and then the Pyramide in Vienne.

He later moved to the Maison Troisgros in Roanne, which has held 3 Michelin stars since 1968, where he stayed for 8 years and held the position of assistant to Head Sommeliers Christian Vermorel and Jean-Jacques Banchet.

In 2007 he joined Paul Bocuse at the Auberge du Pont de Collonges which has held 3 Michelin stars since 1965. The cellar at this Temple of French gastronomy can hold some 20,000 bottles, and Mathieu Vial replenishes it constantly with wines from the Rhone Valley, Burgundy and all other regions of France. It also hold wines from the rest of the world, including Italy, Spain and even from Hungary, Chile, South Africa and the USA..
